Breakfast/Farm Philosophy
Here at Hale Hualalai we promote permaculture so that we can co-exist with our farm, as we feed it, it feeds us. The idea of just having a coffee farm wasn’t enough for us. We wanted something special, so with some hard work, innovation, and focus we have developed Hale Hualalai into a one of a kind place to stay. From our estate grown coffee to our House Frittata, we like to do everything from scratch. As the coffee is hand picked, our breakfast dishes are all hand crafted using local ingredients from our farm, neighboring farms and nearby bakeries. We are constantly expanding and creating new ways to diversify and grow our land.
Our chickens lay wonderful fresh eggs for us every day. We have about 40 chickens that live in mango trees in a 1500 sq ft enclosure at the bottom of our farm, about a 1/4 mile away from the B&B. They eat fresh grass, weeds, mangos, papayas, bananas, guava and whatever type of organic food source we can find around the farm. They share the enclosure with some of our local Hawaiian boar. We have rescued some boar and they life comfortable inside the enclosure with the chickens.
Our solution for weed control in the coffee farm is sheep and goats. We keep a few sheep and a few goats to tackle the ever growing grass and weeds in the coffee farm. However, sometimes it isn’t enough and we need to pull, taking the weeds and using them for compost or additional feed for the chickens.
We make our own organic fertilizer for our plants and trees here on site. It is packed full of micro nutrients and lots of rich minerals for the soil and plants. We do not use any herbicide on the property, we do spray an organic fungus pesticide to treat the coffee for a beetle borer that has tried to take over the island.
Our coffee is ‘ono kine’ stuff! We roast it in an enclosed drum and in small batches. Being that we are a small farm and that our pickers/farmers are local chefs from various restaurants on the island, we are growing/picking for quality not quantity. We pick the ripest cherries (thats what we call the ripe coffee).
